menu request

Well, our budget is not very big.. so we have to cook our own food, which can be fun as well.
We have a kitchen with fridge at the workshop location.

Please post here, or let me know if you are vegetarian, have allergic to specific food, or any other special preferences on eating.

I plan to do at least one evening with BBQ!
It will be great if you could post the menu idea on this blog.

    I am allergic to nuts,
    if we have a big oven pizza is allways good to feed a lot of people, both vegetarian and non vegetarian. I can make the dow, no problem

    pizza is a good idea!

    i also have a super-cheap, simple and awesomely delicious vegetarian pasta sauce recipe that uses canned tomatoes. we could eat it one night with salad and bread. let me know if you want me to make this and i’ll give you a shopping list.

    I was also thinking of Vegetarian (and also non-vegetarian) Chili. Chili is a must menu for a summer camp. no?
    I have a recipe I often use for vegetarian chili. I will scan it and post it soon.
    I was thinking also to do a Swedish food one time. Maybe a Swedish fish soup. Do anyone have a good recipe?

    ok, here it is!
    1/4 cup extra virgin olive oil
    1 1/2 teaspoons crushed red pepper flakes (or less, depending on heat – i usually use about 1 teaspoon)
    1/2 teaspoon fine grain sea salt
    3 medium cloves of garlic, finely chopped or crushed
    1 can crushed red tomatoes (must be crushed, not whole peeled)
    zest of one lemon
    put the oil, pepper flakes, salt and garlic in a cold pan. slowly bring the heat up, so all the flavours infuse the oil. just before the garlic starts to brown, add the tomatoes and continue to cook for about 5 mins. add lemon zest at the end.

    this makes enough for two people, so if we’re going to make 12x the recipe, i’d probably use 12x the tomatoes, but only about 7x the oil, chilli, garlic, salt and perhaps 5x the lemon zest.

    My favorite soup: Anna Persson’s red lentil soup, remixed
    (approx 4-5 people)
    2 carrots
    1 onion
    1 garlic
    1 leek
    Cut and fry a few minutes
    Add 250 g red lentils (rinsed),
    and 500 g strained tomatoes (? passerade tomater)
    and 1,5-2 l water and cumin (spiskummin), 1 bay leaf (lagerblad) and dried coriander, salt and pepper
    Boil for 40 min. When there is 15 min left, add 2 dl bulgur or barley grain

    Take out the bay leaf and mix!
