Ingredients (4 persons)
300g whole wheat spaghetti
1 clove of garlic
5 g fresh basil
olive oil for frying
50g pine nuts
100 g of cream cheese
100g Serrano ham
50g grated cheese Paramzaanse
Cook the spaghetti in a pan with water and salt according to package instructions.
Prepare the vegetables:
Wash the zucchini (courgette) and scrape with a cheese slicer lengthwise into thin slices.
Put the slices together and cut the slices lengthwise into thin strips
Peel and chop the garlic.
Cut the tomatoes into quarters and cut into cubes.
Pick the leaves of the basil and cut into thin strips.
Heat a little oil in a frying pan. Fry the garlic.
Add the tomatoes and cook for about 5 minutes or until tender.
Add the zucchini slivers and fresh basil. Simmer about 1 minute.
The spaghetti with zucchini and tomatoes:
Heat a frying pan and toast the pine nuts
Add the pine nuts to the pasta.
Drain the spaghetti and toss back into the pan with a little of the cooking water.
Add the zucchini and tomato mixture and stir well.
Stir in the cream cheese mixture, and allow to melt
Garnish with Serrano ham and grated cheese
