I had this salad on a hot day in Greece.. and it is perfect for a sweaty day. It could be a nice lunch salad.
Ingredients for 10 servings
3 red onion, chopped
600g Puy or green lentils canned
feta 2pack (400g) cubed
semi-dried tomatoes 1 bottle, chopped
tomatoes 200g, quartered
fresh basil and mint 1 bunch, chopped
1 lemon zest grated
1 lemon juice
Extra-virgin olive oil to serve
1. Drain the canned lentil and wash it well. Stir in the feta, chopped onion, semi-dried tomatoes, cherry tomatoes, basil, mint and the lemon zest.
2. Season it by adding the lemon juice, salt and drizzle with extra-virgin olive oil to serve.
